A lot of us are cooking a lot during this Covid-19 lockdown, and it’s definitely bringing out the chef and inspiration in a lot of people. Though sometimes in our attempt to cook and experiment with food, we often skip out on essential nutrients that need to be part of our diet. And today, we are going to be discussing a really simple recipe using Amaranth Leaves, typically found in red and green colors. I had put up stories of cooking it on my Instagram, and a lot of people reached out for the recipe. So here goes! The Amaranth leaves are rich in protein, vitamins and fiber, and really has a wealth of benefits. This recipe is a stir fry, sort of as a dry starter with rice.

Chaulai Saag Badi Bhaja / Amaranth Red or Green Leaves Fry / Chaulai Saag is a very simple and healthy Odia dish. It is prepared with amaranth red or green leaves along with fried badi (made using soaked and blended urad dal ). So, learn this unique recipe and enjoy with steamed rice.

Cooking Process

Ingredients:

1. Amaranth red or green leaves / Chaulai saag in bunch – 1
2. Sliced onion ( Medium) – 1
3. Panch Phoron (Indian Five Spice Blend)
4. Badi – ( 6-8)
5. Dry red chili – 3
6. Chopped garlic – (4-6)
7. Urad Dal – 1/2 teaspoon
8. Salt to taste
9. Mustard oil – 3-4 teaspoon

Instructions:
1) Heat mustard oil in a Kadhai.
2) Add Panch Phoron and  Urad Dal and fry a bit. then add dry red chili.
3) After that add onion and garlic. Keep tossing onion until it becomes translucent.
4) Add  Amaranth leaves and salt. Toss it a bit and let it cook on low flame with closed lid.
5) Keep tossing every3-4 mins.
6) Meanwhile, fry the badi and garlic in little but oil.
7) Once Saag is read add fried badi and cook for 2 mins.
8) Chaulai Saag Badi Bhaja is ready.

You could use Red Amaranth as well for this!

The Last Word

Try this simple dish, and have it with hot steamed rice. This recipe is from Tapash, it’s something he has grown up eating. And he says it goes very well with pakhala (water rice). Putting badi is optional, you could still make and enjoy this preparation without it. So enjoy people, and stay safe!
