We were invited for an exclusive event of #SpeakGourmet – The Starworld Masterchef Australia Gourmet Gala in association with FoodTalkIndia. This is part of an event series across the country, and the Bangalore edition was held in the beautiful Olive Beach. The place was buzzing with excitement, food enthusiasts and media; a cute little photo booth with cut outs were placed for the posers too! The event was designed to showcase a few MasterChef inspired techniques that is fueling the gourmet revolution already raging in India! It was hosted by the lovely Anjali Batra, CEO of FoodTalkIndia, and Chef Manu Chandra had some exotic creations lined up for the audience that evening showcasing food cooked in several Masterchef inspired techniques like ceviche, confit, smoking, molecular and roulade styles.
The first dish of the Starworld Masterchef Australia Gourmet Gala was inspired from the prevalent trend of Molecular gastronomy – Burrata made out of spherification, tomato and pepper jam, balsamic reduction – oh and a sprinkle of Basil powder on the cheese. Sublime and mild, this was quite something. The Sea Bass Ceviche came next – the Latin American preparation of pickling fish adapted to something quite beautiful. The fish on a bed of raw mango, avocado and rice and topped with a quail egg! Very different, simple and subtle hues of flavor.
The Semolina and smoking corn milk crisps with robiolo, jamun jelly and flora was a perfect bite, of beautiful and colorful flavors. We got the pastry of confit mushrooms with brie, parsley and cream cheese strewn and candied walnut laced with beetroot caviar came next – wonderful! And lastly, the skewered truffle chicken and skin roulade with mustard oil – deliciously presented and an amazing texture of the chicken, made with the painstaking process, that keeps the whole dish from flaking at all!
After the Masterclass, it was time to have some fun. The barbeques were fired up, while the bar was serving some great Chandon drinks. It was an amazing experience thanks to Food Talk India!
