A couple of weeks back Four Seasons hosted a specially curated dinner ‘A Golden Flight of Brilliance’ paired with single malts from Paul John whisky. The venue for the event was The Collective – the lobby bar, overlooking the beautiful pool. The menu looked scrumptious, we reached late, dove straight in to the food. We started off with a delicious amuse bouche. It was pani puri made with single origin Madagascar 64% chocolate with tamarind water – an unexpected adaptation beautifully presented. The gorgonzola malai tikka with beet came next. This was paired with Paul John Brilliance, and Yash Bhamre, brand ambassador explained the tasting notes. Luckily both Yash and Gargi were at our table, and we had a very interesting evening of conversations and exchanging stories of travel, whiskies and food.

The next whisky was Paul John Edited, and we loved it. The single malt had subtle peat notes, and I personally quite liked the hint of smokiness. The finish was nice and long, with delicate hints of spice and cocoa. This was served with a delicious prawn dish. Next up was the Bold whisky, served with Pashtuni Boti Kebab. The meat was cooked to perfection, topped with nuts for the right crunch. And then – the finale and showstoppers for the evening were definitely saved for the last course.

The whisky for this course was a limited-edition single malt from Paul John. Kanya was rated Best Asian Whisky by Jim Murray’s 2018 Whisky Bible. Matured in American white oak casks for seven years, this is an enticing combination of honeyed fruits, with underlying layers of citrus spice and toasted oak. And paired with that was a masterpiece dessert. A cannoli with Kashmiri apple and gulab jamun. This had a mini cotton candy that was the disappearing act as Chef Anubhav poured the berry and brandy consommé.

The Last Word

The meal was fabulous. Some of the dishes had an interesting element of surprise that was very well carried out. The whisky pairing was very well done too. And it was the first time we tried the various expressions of Paul John. The event also featured a BMW 7 Series – showcasing all its exquisite design details, upping the standards of driving pleasure to a whole new level. Four Seasons is a new hotel in Bangalore, but the F&B here is proving to be exemplary. From dinner, to brunches and high tea – I would consider a commute here to experience the property and food totally worth the drive.
