My journey with food has been longer than my travels, or writing. As Bengalis, we get a truly wide, culturally uninhibited exposure to various kinds of cuisine while growing up. So Mughlai, Chinese, Punjabi, Tamil, Marathi, Thai, Italian, Spanish, Turkish food was not alien to us. Yes, you could say over the years, the palate was made more sensitive, lot of adaptations gave way to authentic food and travels took me to places of unique taste, cuisine and offerings.
